Beef and Vegetable Stew
Let’s whip up a terrific recipe for Beef and Vegetable Stew, a hearty dish perfect for any occasion. And here’s a quote to inspire your culinary adventures:
Beef and Vegetable Stew
Ingredients:
- 1.5 lbs (680g) beef stew meat, cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 potatoes, peeled and cubed
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1/4 cup all-purpose flour (for thickening, if desired)
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef and brown it on all sides. This should take about 5-7 minutes. Remove the beef and set it aside.
- In the same pot, add the chopped onion and garlic. Sauté for about 2-3 minutes until they become fragrant and slightly translucent.
- Return the browned beef to the pot and add the carrots, celery, potatoes, and green beans. Stir everything together.
- Pour in the beef broth and diced tomatoes with their juice. Add the dried thyme, dried rosemary, salt, and pepper. Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 2-3 hours or until the beef is tender and the vegetables are cooked to your desired level of tenderness. If you want a thicker stew, you can mix the flour with a little water to form a smooth paste and stir it into the stew during the last 30 minutes of cooking.
- Once the stew is ready, taste and adjust the seasoning if needed. Serve hot, garnished with chopped fresh parsley if desired.
