Do you know what AMORE is? I tell you: OMA’S GERMAN PANCAKES

I have to say my family is crazy about my Pancakes. They are the old german way….. Especially Sophie and Max, my grandchildren go nuts over it.

I actually learned this very simple recipe from my mother growing up in Germany, and I am happy to pass this on. When Sophie went to study in Italy last summer, she found very quickly how food can bring people together and the pancakes she made became a real ‘hit’ amongst her friends.

I make about 40 pancakes and it takes a while to babysit the process. By the way, I only make this large quantity because my family will ration them per person and freeze some.

Here is the recipe:

40 Pancakes you need:

5 cups of flour

3/4 cup sugar

1/2 teaspoon of salt

2 cups of milk ( I like a thinner dough, use less milk for a thicker dough)

1 teaspoon of Almond Extract (optional)

Vegetable Oil

Make the pancakes in batches, 4 at a time in an electric frying pan, and keep turning them. I use a 1/2 soup ladder filled with batter for each pancake and they come out very nicely and almost the same size. Keeping turning them till they are golden brown and place them on a paper towel. Pad of the oil and code in a sugar/cinnamon mixture. You can serve anything you like with it or just leave it with the sugar/cinnamon coding.

Please do not leave the area while you are cooking the pancakes, they very quickly can burn. Keep the heat on 325-350 degree….keep turning them. Enjoy !!!

For Brunch for 2 people I would use:

2 cups of flour

1/4 cup of sugar

1 – 1 1/2 cups of milk

Little Salt

and use the same process as above.
